How Michelin-Starred Restaurants Are Rethinking Fine Dining

It’s been 100 years since the Michelin star rating system was first introduced, back in 1926. Originating in the small French town of Clermont-Ferrand, brothers André and Édouard Michelin began their global legacy with a small red guide filled with handy information for travelers stopping by their tire company. Fast forward a century, and restaurants that earn the highly sought-after star are regarded as some of the finest in the world, with the Michelin Guide becoming one of the most powerful arbiters of culinary prestige. And a symbol of luxury dining that can come with a significant price tag.

Today, kitchens have become spaces for pioneering creative expression—from edible messaging and deep fermentation labs to work that explores art, science and social reflection, all while pushing the boundaries of what’s possible with the freshest ingredients. But there’s another form of creativity entering the conversation, driven by a reality of the modern restaurant industry: as the cost of both running a restaurant and eating out continues to climb, Michelin-starred chefs are finding new ways to make fine dining more accessible. From shorter tasting menus to flexible à la carte and lunch options, some of the world’s most prestigious restaurants are rethinking what luxury dining looks like and who experiences it.

Three Stars, À La Carte

Hélène Darroze at The Connaught is one of London’s premier three-Michelin-star restaurants—one of only 157 in the world. Known globally for their exquisite modern French cooking and seasonal produce selection, in 2026 it made waves as London’s first three-star establishment to offer a build-your-own à la carte lunch menu. In contrast to the standard seven-course tasting menu, starting from £225 per head (~$300), the flexible à la carte menu allows diners to experience a multi-course, three-star masterclass for under £100 (~$135). “With this new à la carte offering, I want each guest to feel that this meal has been made for them,” Darroze shares, with the goal of offering guests more choice in how they experience one of London’s most coveted dining destinations.

Making Michelin More Accessible

But for those who might not have the budget or time for three-star fine dining, increasing numbers of restaurants recognized by the Michelin Guide—from Bib Gourmand spots to one-star establishments—are finding ways to make their cooking more accessible, from shorter tasting menus to affordable set lunches.

In the heart of London’s buzzy Fitzrovia neighborhood is The Ninth, now on its ninth consecutive year of retaining its Michelin star. With lunchtime set menus priced at £39 (~$50) for two courses and £45 (~$60) for three, not to mention its à la carte menu of snacks, pastas, mains, and vegetable plates, a more affordable approach to pricing is part of The Ninth and Chef Jun Tanaka’s holistic outlook on hospitality—one that takes into account both diners and employees.

A similar approach can be found further north, amid Edinburgh’s growing fine-dining scene. Cardinal, helmed by Michelin-starred chef Tomás Gormley, recently launched its Market Menu: a three-course menu priced at just £25 (around $34), designed to give diners a chance to slip in between work meetings and enjoy fine dining in a more relaxed manner.

What’s Next For Fine Dining

This is just a case study in the UK; examples are aplenty across North America, Europe and beyond. For a century, the Michelin star has been synonymous with culinary ambition and the pursuit of perfection. Now, some of the restaurants carrying that distinction are also questioning the conventions that have come to define fine dining. As chefs experiment with format, service and pricing, one of the most interesting questions moving forward may be how fine dining will evolve without losing the exclusivity and sense of occasion that made it so coveted in the first place. Could the next chapter of Michelin be defined not by how much a meal costs, but by how creatively restaurants can give diners different ways, and different price points, to experience the world’s best restaurants?
